Bowl Meals
This quinoa bowl is a deconstructed version of Asian lettuce wraps. You know the wraps where crunchy veggies like shredded carrots and caramelized ground meat are served in a lettuce leaf and drizzled with a tangy soy sauce?
Today's recipe turns Elote, a popular Mexican street food of grilled corn on the cob slathered in a lime and chili powder-infused creamy spread, into a one-bowl meal. A base of quinoa is topped with an Elote-style grilled corn salad, spiced tempeh crumbles, fresh tomato and avocado, cotija or feta, and a smoky lime dressing.
Inspired by the Waldorf salad, this Roasted Salmon Salad keeps the freshness and crunch with grapes and celery, adds lemon juice and dill for extra zing, and roasted salmon to make it a substantial meal. Serve it over a playful mix of greens, broccoli, avocado and sun-dried tomatoes, and you’ve got a great light dinner or portable lunch!
This veggie bowl, packed with a rainbow of colors and a slurp-worthy ginger lime peanut sauce, is an ideal recipe to incorporate into weekly meal planning. It’s appliance-free, uncomplicated cooking that helps you get real food on the table in real life.
I can't tell you how excited I am to share this meal with you. You'll be especially pleased if you usually make a beeline for my Weeknight Dinner section on the homepage. But between the broccoli, chickpeas, shrimp (see veg option in recipe headnotes) and lemon turmeric ginger dressing, I think this meal is universally appealing because it ticks all the boxes in a big way:
Kitchen magic is when the simplest ingredients are simply prepped, then combined to make a flavor-packed, fortifying meal in 10 minutes. This dream scenario becomes reality with this Avocado Quinoa Bowl.
It's a new year -- Happy 2018, you guys! There's something about starting a new year - even though, technically, I know nothing has changed between the 31st and the 1st - that makes me feel lighter, refreshed, and inspired. But in all honesty, we don't need to wait for January for a fresh start. I'm sharing a two-minute strategy I use to reset and get clear on my intentions, any day, any month. And in terms of food, this Everyday Dal is the ultimate reset, whatever the need. It's been one of my go-to recipes for years, whether I need a warm and nourishing pantry meal or a hearty breakfast (yep!).
I know it's technically fall, but can I get a one-week extension on summer? I just have to share these delectable Grilled Corn & Lime Quinoa Bowls first. Here's the flavor rundown: smoky grilled corn & juicy peaches, tangy ranch dressing, lime, and.....
Some of us might have had experiences with limp, boring salads, or thin, watery soups that have left us equating light summer meals with flavorless and unfulfilling fare. That's definitely not the case with these BBQ Bean Summer Bowls. A marriage between BBQ beans and sloppy joe filling, these summer bowls are a lightened up, flavor-packed BBQ meal, sans the bun.
Last year before we left Switzerland, I took the train west to visit a good friend in the Swiss Alps. It was a trip I'll always remember. These pink-hued Beet & Quinoa Bowls with pea pesto, red onion and a simple French vinaigrette were inspired from this trip.
This is a tomato sauce with attitude. It's bold, rich, and spicy, speckled with capers, olives, and tuna. Puttanesca is traditionally made with anchovies but tuna adds a special body to the sauce that makes this a hearty, robust winter meal, especially when layered over quinoa studded with lentils. But feel free to leave the tuna out if you're vegan.
Whether you're feeling run down or wanting to take proactive steps to boost immunity and ward off colds, this is a must-have soup for your winter kitchen toolkit. It's bright from lime and cilantro, sweet from coconut milk, sweet potato, and curry powder, spicy from ginger and chili, and rich in green cleansing power from kale, cauliflower, and cilantro.

Are you feeling a bit chilly this week? Maybe fall has moved in for good where you live and evening temperatures are dipping quite low now. If so, you'll definitely want to make this curry soon!
Guys, you're going to be amazed by the flavor that comes out of this recipe of minimal ingredients. Beets are earthy and sweet and contrast so well with smoky cumin and the fresh zing of cilantro and lime. Chopping raw beets in a....

Every time I make this noodle bowl I wonder why I don't make it more often. It's umami-rich, it's warming, slurp-y, crunchy, and noodle-y. What's missing? Nothing. But the truth is,.....
Fed for comfort is eating well so we live with comfort in our bodies. And what’s more comforting than finding the foods we love and that love us back?
But what is best for our bodies? There’s an obesity epidemic in the Western world, so some may argue we clearly don’t know what to eat. But I argue we have a “seeking” epidemic just as rampant as obesity that misplaces our energy and focus.
If I had to identify one change I've made over the years that has had the greatest impact on maintaining a steady weight and feeling good in my body and about my body, it would be mindful eating - also known as intuitive eating. That's right, it's not the green smoothies, chia seeds, or coconut oil - although those do contribute to my whole nourishment - but rather the state of mind I've cultivated in the kitchen and at the table.
It's the small things in life, like this recipe, that make me happy. I get excited when 'flavor', 'quick', and 'nourishing' can be used in the same sentence to describe a meal. This is a quick one-pot stir-fry/steam hybrid. I start off sautéing the vegetables then add a splash of water and cover to steam for the last few minutes.
If you don't already know it, this Middle Eastern dish is worth getting to know. It's rich, savory, and warmly spiced (think flavor, not heat) with a subtle hint of cinnamon in the background. It has so many good things going for it, especially as a comfort staple in the cooler months.
Would you believe me if I told you this bowl comes together in 6 minutes? Assuming the hummus is already waiting for you in the fridge, you can soft-boil the egg in five minutes, drop asparagus in to blanch the last two, and warm the beans while the egg is cooking. And after all that, there's still a whole minute left to peel the egg and assemble the bowl. Okay, maybe I'm exaggerating a little.
Here we are already at the final installment for the Lunch Power series. Believe it or not, although I use these strategies in my everyday cooking and meal planning I've never put them down on paper, so sharing them with you has reinforced and formalized them for me. So I hope you are also finding useful ways to adapt them to your weekly meal planning and preparation.
This week's Lunch Power spotlight is on a special high-flavor condiment. I'm bringing the Roasted Walnut-Beet Sauce back from the archives because it's that good, both in flavor and in its versatility for expanding our lunch options.
I'm so smitten with this breakfast, I'm not sure where to begin. Let me first start by saying it's one of those quick skillet meals that comes together in the same amount of time it takes to make oatmeal or a smoothie.
